When I stayed at Hedley Inn in Hedley, the Inn Manager Judy Turner was very hospitable. She invited me to several meals she prepared including dinner on May 4th, 2017. It was one of the best "barbecued" pork ribs.
It really was not barbequed. Rather it was marinated in a Bar-B-Que sauce
plus other ingredients and baked in the oven.
It did have one very unique element – see below in bold
No specific amounts given as everything is to taste.
Recipe
o
Pork Ribs – a butcher told me back ribs have more
meat than side ribs – hence pricier
o
Honey
o
½ onion sliced
o
Bull’s Eye BBQ Sauce Honey Garlic Flavor
o
Sweet
Chili Sauce for Chicken (available in Asian stores)
o
A little bit of brown sugar - about ½ teaspoon to
taste
o
No salt or pepper
Mix all of the above and marinate for several hours or
overnight in the refrigerator (best)
Boil the mix - then slow cook in a crockpot or bake in
oven at 325 °F until done.

For the Sides: steamed rice and cole slaw. Surprisingly this was an outstanding trio.
Judy Turner’s cole slaw is a toss of shredded
green cabbage, purple cabbage, julienned carrots, and store-bought cole slaw
dressing.
